Paleo Banana Pancakes

Serves 2-4


2 large ripe banana
4 eggs
1 tsp cinnamon (optional)
Yoghurt, maple syrup and toasted walnuts to garnish


  1. Mash the banana(s) to a smooth consistency with a fork.
  2. Whisk together with your eggs and cinnamon.
  3. Heat fry pan over a low to medium heat.
  4. Oil your pan or grease the bottom with a little butter.
  5. These are more fragile than your traditional pancakes, so make them small and easy to flip.
  6. Cook on each side for about 2 minutes or until lightly browned.
  7. Serve warm with natural or coconut yoghurt, maple syrup and toasted walnuts.
