CAULIFLOWER CHEESE BITES

Makes 18 bites

Ingredients

350g cauliflower, roughly chopped (extra florets to garnish)
30g parmesan, grated (extra to garnish)
1 cup cheddar grated
2 eggs, whisked to combine

OPTIONAL

3 rashers of pancetta finely chopped
1 tbsp. fresh thyme leaves chopped

Method

  1. Preheat oven to 180°C
  2. Chop cauliflower into pieces the size of large breadcrumbs. Place in a large bowl.
  3. Add parmesan and cheddar.
  4. Season with salt and pepper and toss to combine.
  5. Add eggs and stir until combined. If using add the pancetta and thyme now.
  6. Lightly oil and line mini muffin trays with baking paper and fill 18 holes evenly with cauliflower mix. Top with parmesan.
  7. Bake for 25-30 minutes or until browning and slightly puffed. Serve warm.
